Tofu Scramble Breakfast Tacos

You will need:

  • 2 teaspoons of ground cumin
  • 1 teaspoon of curry powder
  • 1 teaspoon of dried thyme
  • ½ teaspoon of ground turmeric
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • 1 teaspoon of salt
  • 4 tablespoons of water
  • 2 tablespoons of olive oil
  • 1 lb of firm tofu that is drained and pressed
  • 1 bunch of chopped green onions
  • ¼ cup of nutritional yeast
  • 12 corn tortillas
  • ¼ cup of Daiya cheddar-style shreds
  • ½ cup of salsa


  1. Take a small bowl and combine all of your seasonings and water.  Whisk the contents together well with a fork.
  2. In a skillet or pan, heat up some olive oil on medium heat.
  3. Take your 1lb of tofu and break or cut it up into smaller chunks and place it into the heated skillet along with some green onions.  Fry the contents for 10 to 12 minutes while stirring often.
  4. Now add in your spice mixture and nutritional yeast.  Stir contents well and fry for about 5 minutes.
  5. Your tofu scramble is now done, and you can portion it out into your 12 corn tortillas.  Top with cheese and salsa and enjoy.

Eggplant Panini

You will need:

  • 4 slices of eggplant.
  • 2 slices of roasted red pepper.
  • 1/4 cup of sautéed onion.
  • 1 handful of baby spinach.
  • Hummus flavor of choice.
  • 2 slices of gluten-free bread of your choosing.


  1. Roast your red paper.  Once it is roasted, immediately put it into a bowl and cover it up with a plastic wrap.  This will help to cool down the pepper so it will be easier to peel.  Let the pepper sit for about 10 minutes.
  2. Chopped and sauté your onions in about 1 tablespoon of olive oil.
  3. Slice up your eggplant and sauté that in the pan as well.
  4. Now you can go ahead and toast the bread that you chose.
  5. Pile all of your ingredients onto the sandwich.  If you would like, spread some vegan margarine on both slices of bread sandwich.
  6. Cook your sandwich on medium-high heat on a pan or skillet for 3 minutes on each side.
  7. Let it cool, serve, and enjoy.

Spinach Pasta Bake

You will need:

  • 12 ounces of pasta of your choice.
  • 1 bag of frozen spinach that is thawed and drained.
  • 4 flax eggs.  These are created by taking 4 tablespoons of flax and 12 tablespoons of warm water and mixing them together.  Leaving them to sit for 2 to 3 minutes.
  • 1/4 cup of hummus.
  • Italian spices of your choosing.
  • Your choice of pasta sauce.


  1. Prepare the pasta by following the directions on the box or bag.  Carefully drain your pasta and set it aside.
  2. Now, mix your pasta, flax eggs, hummus, and half of the spinach together into a large bowl.
  3. Preheat your oven to 350 degrees for later use.
  4. Pour the completed mixture into a greased baking dish.  You can use an 8×8 baking dish or something around that size.
  5. Take your remaining spinach contents and spread that over the top of the pasta mixture.
  6. Cook the baking dish uncovered in your oven at 350 degrees for about 25 to 30 minutes.
  7. Top your contents off with the pasta sauce of your choice and enjoy.

Vegetarian Chili

This is an easy and delicious vegan gluten free recipe if you have a slow cooker on hand.

You will need:

  • 3 cans of diced tomatoes (try two Mexican style tomatoes and 1 regular can of tomatoes).
  • 2 cans of black beans.
  • 2 cans of kidney beans.
  • 1 can of great northern white beans.
  • 1 chopped large onion chopped.
  • 1 chopped red pepper.
  • 5 to 6 diced red potatoes.
  • Chili powder, crushed red pepper, garlic, salt, and pepper to taste.  (All of these are optional).


  1. Take all of the above ingredients and place them into your slow cooker.  Set the setting to “low” and let it cook.
  2. Serve up and enjoy.

Chocolate Covered Dough Balls

You will need:

  • 1 cup of vegan semi-sweet chocolate chips.
  • 6 pitted dates.
  • 3/4 cup of raw almonds.
  • 1/2 a cup of raw pecans.
  • 1 cup of unsweetened shredded coconut.
  • 2 teaspoons of vanilla.
  • 2 tablespoons of maple syrup.
  • 1 tablespoon of agave nectar.
  • 3 tablespoons of unsweetened apple sauce.


  1. Take your almonds and pecans and stick them into a food processor.  Grind contents up until it is fine and in a flour-like consistency.
  2. Add in your coconut and dates and pulse until contents are semi-smooth.
  3. Add in your sweeteners and pulse again until a large ball of dough is formed.
  4. Time to get your hands dirty!  Using your hands, form about 35 dough balls.
  5. Once you are finished, place your dough balls on a greased cookie sheet and bake them for about 8 minutes.
  6. Time to making the coating.  Melt 1 cup of semi sweet vegan chocolate chips in the microwave for around 30 seconds.  Once it is done, stir the contents and microwave again until the chocolate has completely melted (this should take about 2 minutes).
  7. Take your dough balls and roll them into the melted chocolate.
  8. Place the dough balls onto wax paper and stick them in the freezer.  Let them sit and set for about 30 minutes.   Remove them and enjoy!
