How to Make Your Own Fondant
When you are making an elaborately decorated cake, you are going to need a lot of fondant. If you are fairly good in the kitchen and want to attempt to make your own homemade fondant, you will find that it isn’t all that difficult. Making your own will save you a lot of money and rumor has it that people like the taste much better when it is homemade.
Fondant can be marshmallow based or gelatin based. Really, though, gelatin and sugar are what make up marshmallow, so basically you are making a marshmallow fondant from scratch instead of melting marshmallows to do it. Everything is always better when you make it from scratch.
Homemade Fondant Recipe
- 3 Pounds of powdered sugar
- 1 envelope of gelatin
- ½ cup corn syrup
- ½ teaspoon flavoring oil
- 1 tablespoon of glycerin
- shortening or oil for rubbing on hands
For the first step you should sift your powdered sugar. Leave it in a bowl and use what you need when you need it. You probably won’t use all of it, but have it sifted and ready in case you do. If you live in a very humid area then put plastic wrap over the bowl to seal the humidity out. Powdered sugar will want to absorb water out of the air and that might make it a little bit lumpy.
Sprinkle your gelatin over ¼ cup of cold water and set it in a double boiler that has water in the bottom and is ready to go. Turn on the heat and let the double boiler simmer so that it will heat and dissolve the gelatin. Once the gelatin melts, turn off the heat.
Add the corn syrup, flavoring oil, colorant and glycerin to your melted gelatin.
Add half your powdered sugar to a mixing bowl and pour in your gelatin mixture. It is best to use an electric mixer with a dough hook to do the mixing because it gets fairly stiff to stir by hand. Keep adding powdered sugar one cup at a time and reducing the amount as it looks closer to being finished. Keep mixing it in until it is stiff and no longer wet, just a little bit sticky.
Sprinkle powdered sugar onto your kneading surface. Grease your hands with some shortening or oil then turn out your fondant onto the kneading surface.
Knead your fondant until it is smooth and is less sticky. You will need to periodically sprinkle with more powdered sugar and grease your hands again to keep the fondant from sticking to everything.
When the fondant is smooth, pat it into a ball and cover it with plastic wrap. Keep the fondant in the refrigerator for 24 hours to set up. If you are preparing ahead of time then you can keep the fondant in the refrigerator for up to a month.
When you are ready to use it, remove it from the refrigerator and roll it out to ¼” thickness and apply it to your cake or cut it into shapes.
